Orzo Recipe!

Ok, so I have been semi-obsessed with stalking food blogs recently and stumbled upon this fabulous Orzo Salad recipe from Bakin' n Eggs. I made it last night and it DID NOT disappoint. I added shrimp to mine for protein so I could eat as a full meal and it was so wonderful. Also ate for lunch today and probably have 6 servings left, ha! I wanted to share...it's easy but takes time cutting everything up. SO worth it though!



I paired it with fresh basil (thanks Lauren!), fresh mozzarella, and vine tomatoes. Absolutely delicious and healthy!

Ingredients:

1 cup uncooked orzo
1/4 cup sun-dried tomatoes, chopped (rehydrated in hot water if necessary)
1 cup feta cheese, crumbled
1/4 cup red onion, chopped
1/4 cup green bell pepper, chopped
1/4 cup red bell pepper, chopped
1/4 cup yellow bell pepper, chopped
2 tablespoons fresh parsley, chopped
2 tablespoons green olives, chopped
2 tablespoons black olives, chopped
2 tablespoons red wine vinegar
1 tablespoon balsamic vinegar
2 tablespoons olive oil
Salt and pepper, to taste

Directions:

Cook orzo according to package directions and drain. Combine all ingredients in a large bowl and mix well. Chill before serving.

Yield: 4 servings

Wonderful Weekend

This past weekend Joe came to Atlanta and we made sure not a second was wasted! He got in around 8:30ish and we headed to JCT Kitchen for a fabulous dinner. I indulged in some fried chicken and macaroni and cheese while Joe got crispy “Duck & Dumplings” with local greens and preserved tomatoes…both entrees were wonderful! And of course we couldn't’t leave without some dessert so we splurged on Georgia Peach Fried Pies with white chocolate ice cream. I can honestly say it was one of the best desserts I have ever had…I’m still thinking about them!

While we waited for our table, we had drinks in their bar...I'm obsessed with the 'atmosphere' :)
On Saturday, we headed to the Chattahoochee for some tubing action…it was so much fun! We kept saying we need to find a weekend that a lot of people are in town and make a day of it. People were tailgating and grilling out in the parking lot before hitting the water and it looked like so much fun! We didn’t feel too prepared compared to everyone else but we went for it anyways. It took about 3 hrs total to make it to the end of the route where a shuttle picked us up. It was the perfect day trip. However, the water was FREEZING because it had rained the day before so every time we hit a “current” and got splashed, it was not fun, ha.

On Saturday night, we went to Verde for a great Mexican dinner and then headed to Phipps to see Inception. The movie was slightly over the top and kind of hard to follow...but it's worth seeing.
